Mitai Maori Village dinner and show

In traditional hangi cooking food like fish, chicken, lamb, pork or sweet potato is wrapped in flax leaves and cooked in a pit dug in the ground. Baskets of food are placed on hot stones at the bottom of the pit and covered with dirt for about 3-4 hours for some very tender vittles.
